Salmon Pecan Cakes

Salmon is one of the highest sources of omega-3 fatty acids, an ESSENTIAL FAT we absolutely need to remain in optimal health! Especially when it comes to the health of our skin, hair, nails, heart, and virtually EVERY CELL in our body! Check out this easy salmon recipe you'll be sure to LOVE!
Ingredients
1 Can (7.5 ounces) Wild Salmon
1 ½ Cups Pecans
2 Eggs
3 Small Scallions chopped
1 Small Celery Salk chopped
2 Carrots finely diced
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Lime Juice
1/2 Teaspoon Sea Salt
1 Pinch Paprika
Instructions
Preheat oven to 350 degrees.
Drain canned salmon. In a food processor, grind pecans to a fine texture.
Add remaining ingredients and pulse to combine.
Separate into eight medium patties, place on a lightly oiled baking tray, and bake until golden, about 25 to 30 minutes.
Serve with a dollop of plain Greek yogurt or plain Coconut yogurt and a sprig of parsley.
