Low-Carb, Grain-free “Oatmeal”

One of the hardest things about going lower-carb is giving up those hearty grains.
But before you climb back into bed forever, know that a hearty morning- low-carb porridge is still available.
Oatmeal can still exist in your life… even without oats!
Not that I'm saying oats are bad, especially, Bob's Red Mill Gluten-free oats
There are a few different low-carb "oatmeal" alternatives to keep that hearty bowl a part of your mornings, and they’re all pretty damn delicious if I do say so myself!!
Ugh...Are you one of those people that really don't like to cook? Okay, okay...Here's a similar "ready-made" alternative. Keto B'stro has a detox-friendly grain-free oatmeal as well!
Ingredients
For one serving of prepared “Oatmeal”
½ cup 2 Tbsp chia seeds
½ cup 2 Tbsp golden flax meal
½ cup finely shredded unsweetened coconut
1 ½ Tbsp ground cinnamon
½ cup hot water
¼ cup unsweetened coconut, walnut or cashew milk
Natural sweetener to taste (Coconut Nectar or Stevia works)
Instructions
Combine the chia seed, golden flax meal, unsweetened coconut, and cinnamon in an airtight container.
Scoop out ½ cup of “oatmeal” in a serving bowl and keep the rest stored in the airtight container. Store in freezer for optimal "freshness".
Pour ½ cup of water over the “oatmeal” mixture and let sit for 3-5 minutes.
Add sweetener (to taste) and 2 Tbsp of cream into the bowl and stir to combine.
Toppers (optional): ¼ Cup fruit of choice; Toasted coconut; Slivered nuts or seeds
Plain Jane will do but that gets old fast! And the last thing you want to do is "burn-out" on a healthy meal option right out of the gate!
Suggestion- MIX IT UP! Just by adding a few different ingredients, you can create a whole new party in your mouth!
