These are a definite crowd pleaser. And they're especially helpful when trying to wean down the sugar and your intake of overall sweets. Because they're so rich and chocolatey, they really hit the spot! They also contain high levels of plant based omega 3 fats as well since they're loaded with walnuts and hemp hearts!!
2 cup raw walnut pieces
1 cup hulled hemp seeds
1-2 cups pitted Medjool dates (depending on how sweet you'd like them)
1 cup raw cacao powder
3 teaspoons pure vanilla extract
1/2 teaspoon pink Himalayan salt
Line an 9×11 inch square pan with parchment paper, one piece going each way to place the rolled balls on.
In a food processor, process the walnuts into a fine crumb.
Add the hemp hearts and the pitted dates and process until finely chopped and sticky.
It should look like a Larabar in texture and appearance.
Add the cacao powder, vanilla, and sea salt and process until thoroughly combined.
Use a melon scooper to make uniform and portion-sized balls.
Roll mixture into balls and place onto the parchment paper lined cookie sheet.
Place in the freezer for about 20 minutes, then transfer to a Tupperware and store in the freezer. Good for about 8-10 weeks in the freezer.
*Tips: You’ll want to use soft, fresh Medjool dates for this recipe to make it easier on the processor. If your dates are firm, try soaking them in water for 30-60 minutes (and then draining well) before use.
