1/2 cup finely chopped almonds
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
4 4-ounce chicken breasts, pounded to an even thickness
1 egg, beaten
1/4 cup fresh chopped parsley, for garnish
Preheat oven to 375 degrees F.
Combine the almonds, cheese, Italian seasoning, salt, and pepper in a shallow bowl.
Line a baking sheet with parchment paper. Dip each chicken breast in the beaten egg and coat in the almond mixture. Lay on the baking sheet and bake for 15-20 minutes, until chicken is browned and cooked through.
