Easy Paleo Chicken-Broccoli Casserole
I love one pot meals! They are super easy and efficient. The problem is, I don’t find many that I like.
This dish however, has gotten mad props since introduced! Hope you like it!
2 Tbsp coconut oil
4 cups fresh broccoli florets (I also added 2 boxes sliced baby bella mushrooms)
sea salt and pepper
3 cups cooked chicken, shredded
1/3 cup chicken broth (preferably, bone broth)
1/2 cup-3/4 cup full fat coconut milk
1/2 tsp nutmeg
Sauté the mushrooms in a pan with a little of the coconut oil. Coat a 9 x 11 baking dish with coconut oil and mix together the chicken and broccoli (and mushrooms or any other veggies your using), and line the baking dish with them. In a separate bowl, whisk together the eggs, seasonings, coconut milk and chicken broth. Pour liquid over chicken and veggies and bake for about 35 minutes at 350 degrees.
Super easy and delicious!
