If you like tapioca pudding, you’ll LOVE this!
¾ cup chia seeds
4 cups coconut milk (unsweetened, or vanilla)
1 tsp vanilla extract
2 Tbsp grade B pure maple syrup
Combine all ingredients in a blender and blend on low to mix everything together. Refrigerate for 20 minutes, and stir again. Transfer pudding to 2 large mason jars or another glass storage container and refrigerate overnight, or for a few more hours.
May add your own variations- For example, my husband likes to blend into his a frozen banana & raw cocoa or mango for added variety. I like mine plain with just a few sliced berries on top!
