Crust-less Egg & Vegetable Strata

8 whole eggs (preferably free range hormone antibiotic free)
1-cup egg whites
3-4 links Applegate Farms chicken or turkey sausage (optional)
1 large bag frozen spinach (thawed & drained)
2 boxes sliced baby bella mushrooms
Other veggies of choice
Seasonings of choice
Parmesan cheese (optional)

Spray a 9 x 11 glass-baking dish with olive oil non-stick spray. Mix together eggs and egg whites and add seasonings. Sauté mushrooms and veggies of choice in little butter or olive oil and season as desired. Layer the spinach and veggies across bottom of the baking dish. Cook sausage for 15-20 minutes, cut into chunks and layer on top of veggies. Pour egg mixture over veggie mixture evenly. Top with Parmesan cheese and bake for about 20-30 minutes at 350 degrees.
